One hokkaido pumpkin is just too big for just one dish - so each pumpkin I buy ends up in two to three different recipes...so this one, pumpkin bread, was adapted from here http://foodcomablog.com/2011/10/pumpkin-bread/.
It looked great, as my pics hopefully show, I wished I had followed the recipe more closely....unfortunately I put too much nutmeg in which I cannot recommend - so I rather have a nutmeg bread than pumpkin bread - but it is still tasty at least for those who like nutmeg...
